Chicken Omelet (Frittata di Pollo)

Ingredients

30ml/2 tbsp olive oil

1 large onion, sliced

3 potatoes, cooked and cut
into 1 cm/1/2 in dice

1 garlic clove, chopped

1 small green pepper,
chopped

1 small red pepper, chopped
-
100g/1 cup cooked chicken,
diced

6 eggs
-
salt and freshly ground
black pepper
Method:

Heat the oil and fry the onion, potatoes, garlic,
peppers and chicken, stirring occasionally, for 10
minutes.

Beat and season
the eggs. Pour into the pan and cook over a low heat
for about 4 minutes.

Place under a hot
grill until set and the surface is golden brown.

Serve at once,
cut into large wedges.
