Chicken in Tomato Cases (Pomodori con Ripieno di
Pollo)

Ingredients

4 large tomatoes

5ml/1 tbsp olive oil

1/2 onion, chopped
-
1 garlic, crushed
-
75ml/5 tbsp cooked rice

10ml/ 2 tsp chopped fresh
parsley

25g/1/2 cup fresh
breadcrumbs

salt and freshly ground
black pepper

100g/1 cup cooked chicken
breast, chopped

knob of unsalted (sweet)
butter
Method:

Cut the tops off
the tomatoes and scoop out the centers. Place the
tomatoes in an ovenproof dish.

Heat the oil in a
frying pan and fry the onion and garlic. Add the
cooked rice.

Stir in the
parsley and breadcrumbs. Season to taste and stir in
the cooked chicken.

Spoon into the
tomatoes. Dot with tiny amounts of butter and
replace the lids.

Bake in a
preheated oven at 200C/400F/gas mark 6 for 12
minutes.
