Italian Snacks and Light Meals Recipes - Focaccia Mushrooms (Focaccia di Funghi) Recipe

 

Ingredients

  • 225 g/8 oz field mushrooms

  • 225 g/8 oz large flat mushrooms

  • 225 g/8 oz button mushrooms

  • 75ml/5 tbsp olive oil

  • 50g/1/4 cup unsalted (sweet) butter

  • 2 garlic cloves, chopped

  • 2 sprigs of rosemary

  • 1 Rosemary Focaccia Loaf

  • 45 ml/3 tbsp chopped fresh parsley

  • salt and freshly ground black pepper


Method:

  1. Peel and slice large flat mushrooms thickly and halve the smaller ones. Remove any stalks and chop.

  2. Heat the oil and butter and fry (sauté) the garlic for 1 minute with the mushrooms and rosemary.

  3. Slice the bread and brush with hot oil from the mushroom pan.

  4. Heat another frying pan (skillet) and sear the bread on both sides.

  5. Sprinkle the parsley over the mushrooms and serve piled on the slices of bread.
