Italian Snacks and Light Meals Recipes - Franciscan Eggs (Uova alla Francescana) Recipe

 

Ingredients

  • 4 small potatoes

  • 300 ml/1 1/4 cups milk

  • 2 eggs, hard-boiled (hard-cooked), halved

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 25 g/1 oz/1/4 cup plain (all-purpose) flour

  • 1 garlic clove, crushed

  • 50 g/2 oz/1/2 cup hard cheese, grated

  • 30 ml/2 tbsp capers


Method:

  1. Boil the potatoes in the milk for 12 minutes until soft. Drain and reserve the milk.

  2. Place the eggs in an ovenproof dish. Put the butter in a saucepan and cook with the flour for 1 minute.

  3. Gradually blend in the reserved milk and add the crushed garlic. Cut each potato into four and add to the eggs.

  4. Pour over the sauce and sprinkle over the cheese and capers. Place under a grill (broiler) until brown and serve.
