Franciscan Eggs (Uova alla Francescana)

Ingredients

4 small potatoes

300 ml/1 1/4
cups milk
-
2 eggs, hard-boiled
(hard-cooked), halved

25 g/1 oz/2 tbsp
unsalted (sweet) butter

25 g/1 oz/1/4 cup plain
(all-purpose) flour
-
1 garlic clove,
crushed
-
50 g/2 oz/1/2 cup
hard cheese, grated

30 ml/2 tbsp capers
Method:
-
Boil the potatoes in the milk for 12 minutes until
soft. Drain and reserve the milk.

Place the eggs in
an ovenproof dish. Put the butter in a saucepan and
cook with the flour for 1 minute.

Gradually blend in
the reserved milk and add the crushed garlic. Cut
each potato into four and add to the eggs.

Pour over
the sauce and sprinkle over the cheese and capers.
Place under a grill (broiler) until brown and serve.
