Italian Snacks and Light Meals Recipes - Fried Cheese with Eggs (Formaggio Fritto) Recipe

 

Ingredients

  • 350 g/12 oz hard cheese, cut into fingers

  • 60 ml/4 tbsp polenta

  • 75 g/3 oz/1/2 cup unsalted (sweet) butter

  • 30 ml/2 tbsp olive oil

  • 4 large eggs

  • Rosemary Focaccia Bread, to serve


Method:

  1. Roll the cheese in the polenta to coat completely. Melt the butter and oil in a frying pan (skillet).

  2. Fry (sauté) the cheese fingers until turning golden on all sides.

  3. Meanwhile, heat the oil in a separate frying pan and fry the eggs until set.

  4. Slide the cheese and eggs on to warm plates and serve with Rosemary Focaccia.
