Fried Cheese with Eggs (Formaggio Fritto)

350 g/12 oz hard
cheese, cut into fingers

60 ml/4 tbsp polenta
-
75 g/3 oz/1/2 cup
unsalted (sweet) butter

30 ml/2 tbsp olive oil
-
4 large eggs
-
Rosemary Focaccia
Bread, to serve
Method:

Roll the cheese in the polenta to coat completely. Melt the butter and
oil in a frying pan (skillet).

Fry (sauté) the
cheese fingers until turning golden on all sides.

Meanwhile, heat the oil in a separate frying pan
and fry the eggs until set.

Slide the cheese and
eggs on to warm plates and serve with Rosemary Focaccia.
