Fried Potatoes with Courgettes (Patate con Zucchini
e Olive)

Ingredients

15 ml/1 tbsp olive
oil

15 g/1 tbsp
butter

900
g/2 lb
potatoes, thinly sliced

1 large leek, sliced

2 garlic cloves,
crushed

salt and freshly
ground black pepper

2 large courgettes (zucchini),
sliced
-
30ml/2 tbsp green olives, halved and
stoned (pitted)

15ml/1 tbsp
chopped fresh basil
Method:

Heat the olive oil and butter in a large saucepan
and add the potatoes, sliced leek, garlic, salt and
pepper.

Cook, stirring frequently, for 10 minutes
until the potatoes are brown on the edges.

Add the courgettes and continue cooking for 15 minutes. Stir
in the olives and basil and cook for a further 5
minutes before serving.
