Ham and Almond Fritters (Fritelle di Prosciutto e
Mandorle)

Ingredients

120ml/1/2 cup water
-
50g/1/4 cup unsalted
(sweet) butter

2.5ml/1/2 tsp salt

1.5ml/1/4 tsp freshly
ground black pepper

75g/3/4 cup plain
(all-purpose) flour

2 eggs
-
75g/3/4 cup flaked almonds
-
100g/4 oz cooked ham,
chopped

oil for deep-frying
Method:

Bring the
water to the boil and add the butter, salt and
pepper. Remove from the heat when the butter has
melted and beat in the flour.

beating until the mixture comes away from the
sides of the pan.

Beat in the
eggs, one at a time and fold in the almonds and
ham. Allow to cool for 10 minutes.

Deep-fry
teaspoons of the mixture for 3-4 minutes until
golden brown.

Remove from
the pan and drain on kitchen paper. Keep warm
while the rest of the fritters are cooking.
Serve hot.
