Ham and Anchovy Rolls (Prosciutto e Acciughe

Ingredients

5ml/1 tsp olive oil

4 large round crusty rolls
-
25g/2 tbsp unsalted (sweet)
butter

1 small onion, chopped
-
50g/2 oz mushrooms, chopped
-
100g/4 oz prosciutto,
chopped

25g/1/2 small can ancho0vuy
fillets, drained and chopped

1 egg beaten
-
30ml/2 tbsp chopped fresh
parsley

Freshly ground black pepper
-
75g/3 oz Mozzarella cheese,
chopped

1 tomato, sliced in four
Method:

Lightly oil a
baking sheet. Cut a small slice from the top of each
roll and carefully hollow out the centre of the
bread with a teaspoon.

Place the top and
inside of the rolls into a food processor and blend
to make breadcrumbs. Remove to a bowl and set aside.

Heat the butter
and fry the onion for 3 minutes. Add the mushrooms
and fry for a further 3 minutes.

Transfer to a
bowl and add the prosciutto and anchovy fillets.
Blend in the egg and parsley and season with the
pepper.

Add half the
cheese and spoon the stuffing into the rolls. Top
with a slice of tomato and the remaining cheese.

Bake in a
preheated oven at 200C/400F/gar mark 6 for 10
minutes until the tops are brown.
