Italian Snacks and Light Meals Recipes - Italian Tomato Bread (Brushetta al Pomodoro) Recipe

 

Ingredients

  • 1 Ciabatta loaf

  • 1 garlic clove, crushed

  • 5 tomatoes, skinned and chopped

  • 5 ml/1 tsp chopped fresh sage

  • 5 ml/1 tsp olive oil

  • Salt and freshly ground black pepper


Method:

  1. Cut the ciabatta loaf in half making two long slices. Cut in half again width ways and toast lightly. Spread the cut side of the bread with the garlic.

  2. Blend the tomatoes, sage and olive oil together and spread over the bread. Sprinkle with the salt and pepper and serve at once.
