Lombardy Bread (Bruschetta con Bresaola)

Ingredients

6 slices Italian bread,
2.5cm/1 in thick

75ml/5 tbsp olive oil

1 garlic clove, cut i half

225g/8 oz bresaola
(naturally cured beef), thinly sliced

225g/8 oz Mozzarella
cheese, sliced

200g/7 oz/good 1 cup olives
-
fresh parsley, to garnish
Method:

Brush the olive
oil over both sides of the bread slices.

Bake in a
preheated oven at 190C/375F/gas mark 5 for 5 minutes
or toast under a moderate grill.

Cut the garlic in
half and rub over one side of each piece of bread.

Arrange the
bresaola and slices of Mozzarella on the bread.

Add the olives
and bake for a further 8 minutes until the cheese
has melted.

Garnish with the
fresh parsley.
