Italian Snacks and Light Meals Recipes - Lombardy Bread (Bruschetta con Bresaola) Recipe

 

Ingredients

  • 6 slices Italian bread, 2.5cm/1 in thick

  • 75ml/5 tbsp olive oil

  • 1 garlic clove, cut i half

  • 225g/8 oz bresaola (naturally cured beef), thinly sliced

  • 225g/8 oz Mozzarella cheese, sliced

  • 200g/7 oz/good 1 cup olives

  • fresh parsley, to garnish


Method:

  1. Brush the olive oil over both sides of the bread slices.

  2. Bake in a preheated oven at 190C/375F/gas mark 5 for 5 minutes or toast under a moderate grill.

  3. Cut the garlic in half and rub over one side of each piece of bread.

  4. Arrange the bresaola and slices of Mozzarella on the bread.

  5. Add the olives and bake for a further 8 minutes until the cheese has melted.

  6. Garnish with the fresh parsley.
