Melted Cheese with Egg Yolks (Fonduta)

Ingredients

5 ml/1 tsp unsalted
(sweet) butter, melted

3 egg yolks
-
100 g/4 oz Fontina
or Gruyere (Swiss) cheese, grated

2.5 ml/1/2 tsp freshly
ground black

pepper 2.5 ml/1/2 tsp
grated nutmeg
-
4 slices of bread, fried in unsalted (sweet) butter
Method:

Put the butter and egg yolks in a basin over hot
water and beat well.

Stir in the cheese and continue
stirring until the cheese has melted. Stir in the
pepper and nutmeg.

Remove from the heat and serve
spoonfuls on individual plates with fingers of fried
bread.
