Italian Snacks and Light Meals Recipes - Mortadella Rolls (Mortadella Ciabatta) Recipe

 

Ingredients

  • 4 large green peppers, halved and seeded

  • 2.5ml/1/2 tsp salt

  • 2.5ml/1/2 tsp chopped fresh marjoram

  • 10ml/2 tsp olive oil

  • 4 Ciabatta rolls, halved

  • 8 slices mortadella sausage

  • 50g/1/2 cup Parmesan cheese, grated


Method:

  1. Arrange the halved green peppers skin side up on a grill rack and grill for 10 minutes on each side until the peppers are light brown.

  2. Transfer the peppers to an ovenproof dish and sprinkle over the salt and marjoram and keep warm.

  3. Warm the oil in a saucepan. Place the rolls, cut sides up on the grill rack. Top with a slice of sausage and half a pepper.

  4. Sprinkle with Parmesan cheese and spoon over a little olive oil.

  5. Place under the grill for 3-4 minutes until golden.
