Mozzarella Tart (Crostata di Mozzarella)

Ingredients

1 quantity Yeast
Pastry (paste)

100 g/4
oz Mozzarella cheese, sliced

3 bacon rashers
(slices), rinded and chopped

3 large
tomatoes, sliced

50 g/2 oz/1/2 cup Parmesan cheese, grated

2 eggs
-
Salt and freshly
ground black pepper
Method:

Roll out the yeast pastry and line a 20 cm/8 in flan
tin (pie pan). Cover with thin slices of Mozzarella.

Place the bacon in a frying pan (skillet) and cook
for 3 minutes, stirring.

Spoon over the cheese and
add the sliced tomatoes. Sprinkle with the Parmesan
cheese.

Beat the eggs with the salt and pepper until
frothy and pour the mixture over the Parmesan.

Bake
in a preheated oven at 190°C/375°F/gas mark 5 for
35-40 minutes until golden and set.
