Onion Flan (Pasticcio di Cipolle)

225 g/8 oz short crust pastry (basic pie crust)

15 ml/1 tbsp oil

450 g/1lb large
onions, chopped

2 garlic cloves, chopped

20 anchovy fillets
-
20 olives, stoned
(pitted) and halved
Method:

Roll out and line a
shallow, 23 cm/9 in flan tin (pie pan) with the
pastry. Prick the bottom of the pastry with a fork.

Heat the oil in a frying pan (skillet). Add the
onions and garlic and fry (sauté), stirring
occasionally for 5 minutes.

Arrange the onion
mixture in the pastry case (pie shell). Place the
anchovies in a lattice pattern over the surface of
the onions.

Press the olives into the surface of the
onions and bake for 20 minutes
in a preheated oven at 190°C/375°F/gas
mark 5 until the pastry is golden.
