Italian Snacks and Light Meals Recipes - Open Tuna Omelet (Frittata con Tonno) Recipe

 

Ingredients

  • 30 ml/2 tbsp olive oil

  • 1 onion, chopped

  • 185 g/1 small can tuna, drained

  • 8 eggs, lightly beaten

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp finely chopped fresh basil


Method:

  1. Heat the oil and fry (sauté) the onion for 4-5 minutes until soft but not brown.

  2. Add the tuna and season with the salt and pepper. Pour in the eggs and stir well for 3-4 minutes until the eggs are set.

  3. Sprinkle with basil just before serving.
