Open Tuna Omelet (Frittata con Tonno)

Ingredients

30 ml/2 tbsp olive
oil

1 onion, chopped

185 g/1
small can tuna, drained

8 eggs, lightly beaten

Salt and freshly
ground black pepper

15 ml/1 tbsp finely chopped fresh
basil
Method:

Heat the oil and fry (sauté) the onion for 4-5
minutes until soft but not brown.

Add the tuna and
season with the salt and pepper. Pour in the eggs
and stir well for 3-4 minutes until the eggs are
set.

Sprinkle with basil just before serving.
