Pancakes Filled with Eggs and Tuna (Fritelle con
Ripieno di Uova Sode di Tonno)

Ingredients
Pancakes:
Filling:

185 g/6 1/2 oz/1 small
can tuna, drained
-
4 eggs, hard-boiled (hard-cooked)
and chopped
-
1.5 ml/1/4 tsp
cayenne
-
60 ml/4 tbsp double
(heavy) cream
-
15 ml/1 tbsp finely chopped fresh
basil
Method:
-
Put the flour in a large bowl and add the egg, salt and milk. Beat well
and leave to stand for 5 minutes.

Heat a small
amount of the butter and oil in a frying pan
(skillet). Beat the batter again and pour a little
into the pan.

Rotate and tilt the pan to ensure even
cooking and cook for 1 minute until the pancake has
set.

Turn over with a spatula and cook until the
underside has turned brown.

Transfer to a warmed
serving dish while the remaining pancakes are
cooked. Mix the tuna and eggs in a small pan.

Season
with the cayenne and blend in the cream and basil.
Heat through.

Place a pancake on a plate and spread
with a little
of the filling. Repeat with the remainder and roll
up. Serve immediately.
