Italian Snacks and Light Meals Recipes - Pancakes Filled with Eggs and Tuna (Fritelle con Ripieno di Uova Sode di Tonno) Recipe

 

Ingredients

Pancakes:

  • 50 g/2 oz/1/2 cup plain (all-purpose) flour

  • 1 egg

  • 1.5 ml/1/4 tsp salt

  • 90 ml/6 tbsp milk

  • 25 g/1 oz/2 tbsp butter

  • 30 ml/2 tbsp oil

 Filling:

  • 185 g/6 1/2 oz/1 small can tuna, drained

  • 4 eggs, hard-boiled (hard-cooked) and chopped

  • 1.5 ml/1/4 tsp cayenne

  • 60 ml/4 tbsp double (heavy) cream

  • 15 ml/1 tbsp finely chopped fresh basil


Method:

  1. Put the flour in a large bowl and add the egg, salt and milk. Beat well and leave to stand for 5 minutes.

  2. Heat a small amount of the butter and oil in a frying pan (skillet). Beat the batter again and pour a little into the pan.

  3. Rotate and tilt the pan to ensure even cooking and cook for 1 minute until the pancake has set.

  4. Turn over with a spatula and cook until the underside has turned brown.

  5. Transfer to a warmed serving dish while the remaining pancakes are cooked. Mix the tuna and eggs in a small pan.

  6. Season with the cayenne and blend in the cream and basil. Heat through.

  7. Place a pancake on a plate and spread with a little of the filling. Repeat with the remainder and roll up. Serve immediately.
