Prepare the pancakes. Make the fil1ing. Heat the oil
in a pan and cook the onion for 2 minutes.

Stir in
the red peppers and the mustard and season with the
salt and pepper. Cook for 4-5 minutes until soft.

Place 2 pancakes on each plate, spoon over the
peppers and roll up lightly. Serve at once.
