Ingredients

  • 1 quantity pancake batter

Filling:

  • 15 ml/1 tbsp oil

  • 1 small onion, chopped

  • 3 red (bell) peppers, sliced

  • 5 ml/1 tsp made mustard

  • Salt and freshly ground black pepper


Method:

  1. Prepare the pancakes. Make the fil1ing. Heat the oil in a pan and cook the onion for 2 minutes.

  2. Stir in the red peppers and the mustard and season with the salt and pepper. Cook for 4-5 minutes until soft.

  3. Place 2 pancakes on each plate, spoon over the peppers and roll up lightly. Serve at once.
