Parsley and Basil Omelet (Frittata di Basilico e
Prezzemolo)

Ingredients

4 large eggs
-
30 ml/2 tbsp single
(light) cream

30 ml/2 tbsp chopped
fresh parsley

30 ml/2 tbsp chopped fresh basil
-
Salt
and freshly ground black pepper

45 ml/3 tbsp olive
oil
Method:

Break the eggs into a bowl. Add the cream and
lightly beat until blended.

Beat in the herbs and a
little salt and pepper. Heat the oil in a flying pan
(skillet).

Add the egg mixture and fly (sauté),
lifting and stirring until the base begins to set,
then cook until golden underneath and set.

Invert on
to a plate then slide back in the pan and cook the
other side for 2-3 minutes until golden. Serve warm
or cold.
