Italian Snacks and Light Meals Recipes - Parsley and Basil Omelet (Frittata di Basilico e Prezzemolo) Recipe

 

Ingredients

  • 4 large eggs

  • 30 ml/2 tbsp single (light) cream

  • 30 ml/2 tbsp chopped fresh parsley

  • 30 ml/2 tbsp chopped fresh basil

  • Salt and freshly ground black pepper

  • 45 ml/3 tbsp olive oil


Method:

  1. Break the eggs into a bowl. Add the cream and lightly beat until blended.

  2. Beat in the herbs and a little salt and pepper. Heat the oil in a flying pan (skillet).

  3. Add the egg mixture and fly (sauté), lifting and stirring until the base begins to set, then cook until golden underneath and set.

  4. Invert on to a plate then slide back in the pan and cook the other side for 2-3 minutes until golden. Serve warm or cold.
