Pea Frittata (Frittata di Piselli)

115 g/8 oz fresh
shelled peas

45ml/3 tbsp
olive oil

2 spring onions
(scallions), chopped

4 eggs
-
30ml/2 tbsp grated Parmesan
cheese

salt and freshly ground
black pepper
Method:
-
Steam the peas for
15 minutes until they
are just
tender.

Heat the oil in a frying pan and
add the chopped spring onions. Cook until
browned.

Stir in the the peas and cook for
1 minute.
Whisk the
eggs in a
bowl and stir in the Parmesan and
seasoning.

Pour the egg mixture over the peas and
spring onions and cook over a low heat until the
base of the frittata is a golden color.

Put the pan
under a hot grill (broiler) to cook the surface. Cut
the frittata into wedges and serve hot or cold.
