Potato Flan (Sformato di Patate)

Ingredients

225 g/8oz short crust pastry (basic pie crust)

450 g/1lb
potatoes, boiled and sliced

3 bacon rashers
(slices), rinded and chopped

2 onions, chopped

Salt and freshly
ground black pepper

2 eggs
-
30 ml/2 tbsp single
(light) cream
Method:

Line a 23 cm/9 in flan tin (pie pan) with
pastry.

Cover the base with a layer of the sliced
potatoes, bacon and onion and continue to add in
layers until the pastry is almost filled.

Season
with salt and pepper. Beat the eggs and cream
together and pour over the potato mix.

Bake in a
preheated oven at 190°C/375°F/gas mark 5 for 20-25
minutes until set and golden.
