Quick Crostini (Crostini alla Svelta)

Ingredients

1 long Ciabatta
loaf

30 ml/2 tbsp olive
oil
-
45 ml/3 tbsp
vegetable oil

1 garlic clove
-
450 g/1 lb tomatoes

225 g/8 oz
Mozzarella cheese, sliced

200 g/7 oz/good 1 cup
olives, stoned (pitted)

Fresh dill (dill
weed), to garnish
Method:

Cut the bread into slices about 2.5 cm/1 in
thick. Blend the olive oil and vegetable oil
together and brush over both sides of the bread.

Bake in a preheated oven at 190°C/375°F/gas mark 5
for 5 minutes or toast under a moderate grill
(broiler).

Cut the garlic in half and rub over one
side of each piece of bread. Cut the tomatoes into
slices and arrange on the bread.

Layover the slices
of Mozzarella. Add the olives and bake for a further
8 minutes until the cheese has melted. Garnish with
the fresh dill.
