5ml/2 tsp unsalted (sweet)
butter

3 egg yolks

100g/1 cup Fontina or
Gruyere (Swiss) cheese, grated

Freshly ground black pepper

2.5ml/1/2 tsp chopped fresh
oregano

4 slices of bread, fried
Method:

Put the butter
and egg yolks in a basin over hot water and beat
well.

Stir in the
cheese and continue stirring until the cheese has
melted. Stir in pepper to taste and the oregano.

Remove from the
heat and serve on the fried bread.
