Red Pepper Pots (Vasetti di Peperoni Rosso)

Ingredients

4 red peppers, seeded and
quartered

2 garlic cloves, finely
chopped

4 tomatoes, halved

30ml/2 tbsp virgin olive
oil

salt and freshly ground
black pepper

100g/1/2 cup cream cheese
-
15ml/1 tbsp chopped fresh
parsley
-
4 black olives, stoned and
chopped
-
Crusty bread, to serve
Method:

Put the peppers,
garlic and tomatoes in a shallow ovenproof dish and
sprinkle with olive oil. Season with the salt and
pepper.

Cook in a
preheated oven for 45 minutes at 200C/400F/gas mark

Puree in a
blender or food processor. Leave to cool slightly
then blend in the cream cheese.

Season to taste
and divide between four individual dishes. Scatter
over the parsley and chopped black olives.

Serve straight
away with plenty of crusty bread.
