Rustic Pizza (Pizza Rustica)

Ingredients

225 g/8 oz short crust pastry (basic pie crust)

3 egg yolks

350 g/12 oz/1 1/2
cups Ricotta cheese

100 g/4 oz Mozzarella cheese,
cut in small pieces

175 ml/6 fl oz/3/4
cup milk
-
Salt and freshly
ground black pepper
-
1.5 m/1/4 tsp cayenne

Chunky Tomato Sauce,
to serve
Method:

Rol1 out the pastry and use to line a 23 cm/9 in
flan tin (pie pan).

Fill with greaseproof (waxed)
paper and baking beans and bake in a preheated oven
at 190°C/375°F/gas mark 5 for 10 minutes.

Take the pastry from the oven and remove the paper
and baking beans.

Beat the egg yolks and Ricotta
together with the Mozzarella. Stir in the milk and
season with the salt, pepper and cayenne.

Pour into
the pastry case and bake at 180°C/350°F/gas
mark 4 for 40 minutes. Serve with Chunky Tomato
Sauce.
