Italian Snacks and Light Meals Recipes - Sage Polenta Discs (Rotelle di Polenta con Salvio) Recipe

 

Ingredients

  • 600 ml/1 pt/2 1/2 cups milk

  • 15 g/1 oz/2 tbsp butter

  • 175 g/6 oz/1 1/2 cups pre-cooked cornmeal

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated

  • 30ml/2 tbsp finely chopped fresh sage

  • salt and freshly ground black pepper

  • 15ml/1 tbsp plain (all-purpose) flour

  • 100 g/4 oz goals' cheese, diced

  • 10ml/2 tsp chopped fresh oregano


Method:

  1. Heat the milk and butter together in a saucepan until almost boiling.

  2. Whisk in the cornmeal and beat over a moderate heat with a wooden spoon until thick.

  3. Cool for 1 minute and add the Parmesan, sage, salt and pepper. Cool for 5 minutes.

  4. Roll the polenta out on a floured board to 1 cm/1/2 in thick and cut out 24 round discs.

  5. Grill (broil) until golden. Serve garnished with goats' cheese and oregano.
