Sage Polenta Discs (Rotelle di Polenta con Salvio)

600 ml/1 pt/2 1/2
cups milk

15 g/1 oz/2 tbsp butter

175 g/6 oz/1 1/2 cups
pre-cooked cornmeal

50 g/2 oz/1/2 cup Parmesan
cheese, grated

30ml/2 tbsp finely
chopped fresh sage

salt and freshly ground black
pepper

15ml/1 tbsp plain (all-purpose) flour

goals' cheese, diced

10ml/2 tsp chopped
fresh oregano
Method:

Heat the milk and butter together in a saucepan
until almost boiling.

Whisk in the cornmeal and beat
over a moderate heat with a wooden spoon until
thick.

Cool for 1 minute and add the Parmesan, sage,
salt and pepper. Cool for 5 minutes.

Roll the polenta out on a floured board to 1 cm/1/2 in
thick and cut out 24 round discs.

Grill (broil)
until golden. Serve garnished with goats' cheese and
oregano.
