Sicillian Toast (Crostini alla Siciliana)

Ingredients

100g/1 cup calves' liver

15ml/1 tbsp olive oil

1 onion, chopped

1 egg
-
Freshly ground black pepper

150ml/2/3 cup double (heavy
cream)

4 slices bread
-
15ml/1 tbsp chopped fresh
parsley
Method:

Fry the liver in
the oil for 5 minutes. Add the chopped onion and
continue cooking until the onion is translucent.

Hard-boil the
egg, peel and chop. Put the liver and onion through
a grinder and mix with the egg, pepper and crusts.

Cut into shapes
and place on a platter. Spoon the liver and onion
mixture into the centre of each toasted shape and
sprinkle with the parsley.
