Italian Snacks and Light Meals Recipes - Sicillian Toast (Crostini alla Siciliana) Recipe

 

Ingredients

  • 100g/1 cup calves' liver

  • 15ml/1 tbsp olive oil

  • 1 onion, chopped

  • 1 egg

  • Freshly ground black pepper

  • 150ml/2/3 cup double (heavy cream)

  • 4 slices bread

  • 15ml/1 tbsp chopped fresh parsley


Method:

  1. Fry the liver in the oil for 5 minutes. Add the chopped onion and continue cooking until the onion is translucent.

  2. Hard-boil the egg, peel and chop. Put the liver and onion through a grinder and mix with the egg, pepper and crusts.

  3. Cut into shapes and place on a platter. Spoon the liver and onion mixture into the centre of each toasted shape and sprinkle with the parsley.
