Italian Snacks and Light Meals Recipes - Spinach and Mozzarella Pastry (Pasticcio di Spinaci e Mozzerrella) Recipe

 

Ingredients

  • 150 g/5 oz/1 1/4 cups plain (all-purpose) flour

  • 50 g/2 oz/1/4 cup butter

  • 1 egg yolk

  • Salt and freshly ground black pepper

  • 1 large tomato, thinly sliced

  • 400 g/14 oz spinach, cooked and drained

  • 2 whole eggs

  • 75 ml/5 tbsp double (heavy) cream

  • 50 g/2 oz/1 small can anchovy fillets

  • 75 g/3 oz Mozzarella cheese, sliced


Method:

  1. Put the flour in a large bowl and rub in the butter until the mixture resembles breadcrumbs.

  2. Blend in the egg yolk, salt and pepper and 45 ml/3 tbsp cold water to form a stiff dough.

  3. Roll out the pastry and use to line a 20 cm/8 in flan tin (pie pan). Place the tomato slices over the base and spoon over the cooked and drained spinach.

  4. Whisk the whole eggs and cream together and season with salt and pepper. Drain the anchovies and layover the spinach.

  5. Place slices of Mozzarella over the anchovies and pour over the cream mixture.

  6. Bake in a preheated oven at 190°C/375°F/gas mark 5 for 30 minutes until set and golden. Serve hot or cold.
