Almond Soup (Zuppa Mandorle) Recipe
Ingredients

25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
1 onion, minced
-
100 g/4 oz/1 cup ground
almonds
-
250 ml/8 fl oz/1 cup water
-
250 ml/8 fl oz/1 cup
single (light) cream
-
1/4 cucumber, cut in
small cubes and steamed
-
Salt and freshly ground
black pepper
Method:

Heat the butter in a frying pan (skillet) and cook
the onion for 2 minutes. Stir in the almonds and
cook until slightly browned.

Add the water and
cream. Simmer for 15 minutes and add the cucumber
cubes. Season and serve.
