Italian Soups Recipes - Autumn Soup (Zuppa d' Autunno) Recipe

Ingredients

  • 1 onion, finely chopped

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 2 courgettes (zucchini), coarsely chopped

  • 1 yellow (bell) pepper, chopped

  • 2 large carrots, chopped

  • 500 ml/17 fl oz/2 1/4 cups chicken stock

  • 150 g/5 oz/scant 1 cup red lentils

  • 2.5 ml/1/2 tsp curry powder

  • 250 ml/8 fl oz/1 cup thick (heavy) cream

  • Salt and freshly ground black pepper


Method:

  1. Cook the onion in the butter until soft and golden. Add the vegetables and cook for 8 minutes, stirring.

  2. Pour in the chicken stock and lentils. Bring to the boil and simmer, covered, for 30 minutes. Allow the mixture to cool slightly.

  3. Transfer to a blender or food processor and puree until smooth. Return to the saucepan.

  4. Add the remaining Ingredients and reheat. Do not allow to boil.
