Autumn Soup (Zuppa d' Autunno) Recipe
Ingredients

1 onion, finely chopped
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
2 courgettes (zucchini),
coarsely chopped
-
1 yellow (bell) pepper,
chopped
-
2 large carrots,
chopped
-
500 ml/17 fl oz/2 1/4
cups chicken stock
-
150 g/5 oz/scant 1 cup red lentils
-
2.5 ml/1/2 tsp curry
powder
-
250 ml/8 fl oz/1 cup
thick (heavy) cream
-
Salt and freshly ground
black pepper
Method:
-
Cook
the onion in the butter until soft and golden. Add
the vegetables and cook for 8 minutes, stirring.

Pour in the chicken stock and lentils. Bring to
the boil and simmer, covered, for 30 minutes. Allow
the mixture to cool slightly.

Transfer to a blender
or food processor and puree until smooth. Return to
the saucepan.

Add the remaining Ingredients and
reheat. Do not allow to boil.
