Ingredients

3 eggs
-
275 g/2 1/2 cups
plain (allpurpose) flour
-
Salt
-
1.25 liters/2 1/4 pts/5 1/2
cups chicken stock
-
150 ml/2/3 cup
white wine
Method:

Put the eggs, flour and a pinch of salt into a large
bowl and blend to a firm dough.

Roll out very thinly
and allow to stand for 35 minutes to dry. Cut the
dough into small triangles, about the size of a
thumbnail.

Place the stock and wine in a saucepan
and bring to the boil. Lower the heat and simmer.

Add the pasta to the stock. Cook for 4 minutes or
until the pasta is tender and serve hot.
