Italian Soups Recipes - Badly cut Pasta Soup (Minestra di Maltagliati) Recipe

Ingredients

  • 3 eggs

  • 275 g/2 1/2 cups plain (all­purpose) flour

  • Salt

  • 1.25 liters/2 1/4 pts/5 1/2 cups chicken stock

  • 150 ml/2/3 cup white wine


Method:

  1. Put the eggs, flour and a pinch of salt into a large bowl and blend to a firm dough.

  2. Roll out very thinly and allow to stand for 35 minutes to dry. Cut the dough into small triangles, about the size of a thumbnail.

  3. Place the stock and wine in a saucepan and bring to the boil. Lower the heat and simmer.

  4. Add the pasta to the stock. Cook for 4 minutes or until the pasta is tender and serve hot.
