Ingredients

150 g/12 oz shin of beef
-
1.2litres/2 pts/5 cups
cold water
-
1.5 ml/1/4 tsp salt
-
1 doves
-
1 onion
-
1 celery sticks
-
1 carrots, roughly
chopped
-
bunch of fresh herbs,
such as parsley, tarragon and basil
Method:

Place the meat in a large saucepan and cover with
the cold water. Add the salt, cover and bring to the
boil.

Skim the surface with a slotted spoon to
remove the foam. Push the cloves into the onion and
add to the pan with the other vegetables and herbs.
Stir and cover.

Simmer for 1 1/4 hours, remove from
the heat and allow to cool for 10 minutes.

Strain
the broth through a muslin cloth (cheesecloth).
Allow to cool completely and strain again.

Reheat
before serving. This is also good with a little
cooked rice or soup pasta added.
