Italian Soups Recipes - Broad Bean Soup (Zuppa di Fave) Recipe

Ingredients

            

  • 30 ml/2 tbsp oil

  • 1 onion, sliced

  • 1 celery stick, chopped

  • 1 garlic clove, crushed

  • 450 g/1lb fresh or frozen broad (lima) beans

  • 15 ml/1 tbsp chopped fresh parsley

  • Salt and freshly ground black pepper

  • 1.2 liters/2 pts/5 cups chicken stock


Method:

  1. Heat the oil in a saucepan. Add the onion, celery and garlic and fry (sauté) for 3 minutes.

  2. Add the remaining ingredients, bring to the boil, reduce the heat, cover and simmer gently for 20 minutes.

  3. Puree in a blender or food processor. Return to the pan, heat through and serve.
