Ingredients

30 ml/2 tbsp oil

1 onion, sliced

1 celery stick, chopped
-
1 garlic clove, crushed
-
450 g/1lb fresh or
frozen broad (lima) beans

15 ml/1 tbsp chopped
fresh parsley

Salt and freshly ground black pepper

1.2
liters/2 pts/5 cups chicken stock
Method:
-
Heat the oil in a saucepan. Add the onion, celery
and garlic and fry (sauté) for 3 minutes.

Add the
remaining ingredients, bring to the boil, reduce the
heat, cover and simmer gently for 20 minutes.

Puree
in a blender or food processor. Return to the pan,
heat through and serve.
