Ingredients

6 celery sticks
-
30 ml/2 tbsp oil

1 onion, finely chopped
-
450 g/1 lb
chicken, finely chopped
-
900 ml/3 3/4 cups chicken
stock
-
30 ml/2 tbsp chopped fresh oregano
-
100 g/4 oz fine
macaroni
-
Salt and freshly ground
black pepper
Method:

Chop the celery into 1
cm/1/2 in pieces. Heat the oil in a large saucepan and
cook the celery and onion for 1 minute.

Add the
chicken and cook for 5 minutes, stirring all the
time. Add the stock and oregano and bring to the
boil.

Lower the heat and simmer for 40 minutes,
stirring occasionally.

Stir the macaroni into the broth and season well
with the salt and pepper.

Continue cooking for 20
minutes, stirring from time to time, then serve very
hot.
