Italian Soups Recipes - Citrus Soup (Zuppa di Agrumi) Recipe

Ingredients

  • 450 g/1lb frozen lemon sorbet

  • 20 ml/4 tsp vodka

  • Thin strips of lemon rind Sprigs of mint, to garnish


Method:

  1. Put 4 soup plates in the freezer for 10 minutes. Allow the sorbet to soften in the fridge for 20 minutes.

  2. Puree for 20 seconds in a food processor or blender, adding the vodka halfway through.

  3. Pour into the soup bowls. Sprinkle over the lemon rind and garnish with the mint.
