Italian Soups Recipes - Country Vegetable Soup (Zuppa Rustica di Verdura) Recipe

Ingredients

  • 2 leeks

  • 225 g/8 oz parsnips

  • 225 g/8 oz carrots

  • 1 large onion

  • 2 celery sticks

  • 2 garlic cloves

  • 275 g/10 oz courgettes (zucchini)

  • 450 g/1lb tomatoes

  • 450 g/1lb green cabbage

  • 225 g/8 oz broccoli

  • 30 ml/2 tbsp chopped fresh parsley

  • 2.5 ml/1/2 tsp chopped fresh thyme

  • 2.5 ml/1/2 tsp chopped fresh basil

  • 2 bay leaves

  • Salt and freshly ground black pepper


Method:

  1. Roughly chop the vegetables and the parsley. Place in a stock pot and cover with 1.25 liters/2 1/4 pts/5 1/2 cups water.

  2. Bring to the boil over a high heat. Reduce the heat and add the herbs.

  3. Cover with a lid and simmer for 1 hour. Discard the bay leaves before serving.
