Italian Recipes - Country Vegetable Soup (Zuppa di Rustica di Verdura) Recipe
Ingredients
2 leeks
225 g/8 oz parsnips
225 g/8 oz carrots
1 large onion
2 celery sticks
2 garlic cloves
275 g/10 oz courgettes (zucchini)
450 g/1lb tomatoes
450 g/1lb green cabbage
225 g/8 oz broccoli
30 ml/2 tbsp chopped fresh parsley
2.5 ml/1/2 tsp chopped fresh thyme
2.5 ml/1/2 tsp chopped fresh basil
2 bay leaves
Salt and freshly ground black pepper
Method:
Roughly chop the vegetables and the parsley. Place in a stock pot and cover with 1.25 liters/2 1/4 pts/5 1/2 cups water.
Bring to the boil over a high heat. Reduce the heat and add the herbs.
Cover with a lid and simmer for 1 hour. Discard the bay leaves before serving.
