Italian Soups Recipes - Crayfish Soup (Zuppa di Gamberi) Recipe

Ingredients

  • 24 large crayfish or Dublin Bay Prawns

  • 1.2 liters/2 pts/5 cups water

  • 25 g/1 oz/2 tbsp butter

  • 2 onions, chopped

  • 150 ml/2/3 cup brandy

  • 25g/1 oz/2 tbsp long-grain rice

  • 5 ml/1 tsp tomato puree (paste)

  • 2 tomatoes, chopped

  • 2 egg yolks

  • 45 ml/3 tbsp single (light) cream

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Place the crayfish in a large saucepan with the water and bring to the boil. Reduce the heat and simmer for 20 minutes.

  2. Drain and reserve the liquid. Shell the crayfish and roughly chop. Meanwhile, heat the butter in a saucepan and fry (sauté) the onions.

  3. Add the stock from the crayfish with the brandy, rice, tomato puree and tomatoes and bring to the boil. Simmer for 20 minutes.

  4. Add the crayfish. Stir in the egg yolks and the cream. Blend and reheat gently, but do not boil. Sprinkle with the parsley and serve.
