Ingredients

1 head celery, roughly
chopped

1 small onion, chopped

15 ml/1 tbsp olive oil

250 ml/8 fl oz/1 cup
double (heavy) cream

250 ml/8 fl oz/1 cup
milk
-
Salt and freshly ground
black pepper
Method:

Put the celery in a saucepan with 600 ml/2 1/2 cups water and bring to the boil until soft.

Fry (sauté) the onion in the olive oil for 5
minutes. Put the celery with its liquid and onion
through a sieve (strainer), blender or food
processor and return to the saucepan.

Add the cream
and milk and season well with the salt and pepper.
Serve very hot.
