Italian Soups Recipes - Cream of Celery Soup (Zuppa di Sedani) Recipe

Ingredients

  • 1 head celery, roughly chopped

  • 1 small onion, chopped

  • 15 ml/1 tbsp olive oil

  • 250 ml/8 fl oz/1 cup double (heavy) cream

  • 250 ml/8 fl oz/1 cup milk

  • Salt and freshly ground black pepper


Method:

  1. Put the celery in a saucepan with 600 ml/2 1/2 cups water and bring to the boil until soft.

  2. Fry (sauté) the onion in the olive oil for 5 minutes. Put the celery with its liquid and onion through a sieve (strainer), blender or food processor and return to the saucepan.

  3. Add the cream and milk and season well with the salt and pepper. Serve very hot.
