Italian Soups Recipes - Cream of Lettuce Soup (Minestra di Lattuga) Recipe

Ingredients

  • 450 g/1lb lettuce or endive, chopped

  • 600 ml/2 1/2 cups Celery Soup

  • 2.5 ml/1/2 tsp celery salt

  • 250 ml/8 fl oz/1 cup single (light) cream


Method:

  1. Place the lettuce in a saucepan with the celery soup and simmer for 20 minutes until soft.

  2. Put through a sieve (strainer), or puree in a blender or food processor and return to the saucepan.

  3. Cook gently for 30 minutes to reduce and thicken the soup.

  4. Stir in the celery salt and add the cream. Reheat for 2 minutes.
