Cream of Tomato
Soup (Zuppa di Pomodoro e Crema)

Ingredients

2 onions, chopped
-
5 ml/1 tsp olive oil
-
25 g/1 oz/1/4 cup plain
(all-purpose) flour
-
1 kg/2 1/4 lb tomatoes,
skinned and chopped
-
2.5 ml/1/2 tsp sugar
-
Salt and freshly ground
black pepper
-
1.2 litrs/2 pts/5 cups chicken or vegetable stock

150 ml/2/3 cup
single (light) cream
Method:

Place the onions in a frying pan (skillet) with the
oil. Cook until translucent and soft and sprinkle
over the flour. Cook for 2 minutes.

Stir in the
tomatoes and sugar. Season with the salt and pepper.
Pour in the stock and cook for 15 minutes.

Puree in
a blender or food processor or rub through a sieve
(strainer). Stir in the cream just before serving.
