Ingredients

1.2 liters/2 pts/5 cups
vegetable stock
-
175 g/6 oz potatoes, diced
-
3 onions, chopped
-
4 tomatoes, skinned and
chopped
-
2 carrots, chopped
-
450 g/1lb French
(green) beans, chopped
-
Salt and freshly ground black
pepper
-
4 garlic cloves, crushed
-
5 ml/1 tsp chopped
fresh basil
-
30 ml/2 tbsp olive oil
Method:
-
Put the stock into a saucepan and bring to the boil.
Add the vegetables and simmer for 15 minutes,
stirring occasionally.

Stir in the salt and pepper.
Add the garlic, basil and olive oil, continue
cooking for a further 10 minutes and serve.
