Soup (Zuppa di Limone e Riso)

Ingredients

900 ml/3 3/4 cups
chicken stock
-
100 g/4 oz/1/2 cup long-grain rice
-
3 egg yolks
-
75 g/3 oz/3/4 cup
Parmesan cheese, grated
-
Juice of 1/2 lemon
Method:

Heat the stock until boiling then pour in the rice.
Cook for 20 minutes. Allow to cool for 5 minutes.

Beat the egg yolks in a bowl and stir in the cheese
and lemon juice.

Stir this mixture into the soup
immediately before serving.
