Recipe
Ingredients

300 ml/ 1 1/4 cups vegetable
stock
-
300 ml/1 1/4 cups boiling water
-
150 g/5 oz/1 small can baked
beans in tomato sauce
-
2 carrots, finely diced
-
1 leek, cut into 2.5 cm/1 in
rings
-
50 g/2 oz quick-cook macaroni
-
225g/8 oz/1 small can tomatoes
-
1 garlic clove, crushed
-
1 celery stick, sliced
-
1 onion, chopped
-
Salt and freshly ground black
pepper
-
15 ml/1 tbsp grated Parmesan
cheese
Method:
-
Combine all the ingredients except the Parmesan
cheese in a bowl.

Cover with Clingfilm (plastic wrap), pierce once or
twice and microwave on full for 8 minutes. Stir well
and cook again for 10 minutes. Leave to stand for 5
minutes. Serve in individual bowls and sprinkle with
the Parmesan cheese.
