Ingredients

450 g/1 lb mushrooms,
cut in halves

15 g/1/2 oz/1 tbsp butter

250 ml/8 fl oz/1 cup
vegetable stock

250 ml/8 fl oz/1 cup single (light) cream
-
2.5 ml/1/2 tsp paprika
Method:

Cook the mushrooms in the butter for 5 minutes and
stir in the vegetable stock.

Simmer for 20 minutes
until the mushrooms are tender. Rub through a
coarse sieve (strainer) or puree in a blender or
food processor.

Stir in the cream. Sprinkle lightly
with the paprika.
