Italian Soups Recipes - Mushroom Soup (Minestra di Funghi) Recipe

Ingredients

  • 450 g/1 lb mushrooms, cut in halves

  • 15 g/1/2 oz/1 tbsp butter

  • 250 ml/8 fl oz/1 cup vegetable stock

  • 250 ml/8 fl oz/1 cup single (light) cream

  • 2.5 ml/1/2 tsp paprika


Method:

  1. Cook the mushrooms in the butter for 5 minutes and stir in the vegetable stock.

  2. Simmer for 20 minutes until the mushrooms are tender. Rub through a coarse sieve (strainer) or puree in a blender or food processor.

  3. Stir in the cream. Sprinkle lightly with the paprika.
