Italian Soups Recipes - Potato Soup (Zuppa di Patate) Recipe

Ingredients

  • 2 leeks

  • 50 g/2 oz/1/4 cup butter

  • 900 g/2 lb potatoes, thinly sliced

  • 25 g/1 oz/1/4 cup plain (all-purpose) flour

  • 600 ml/2 1/2 cups milk

  • 2.5 ml/1/2 tsp grated nutmeg

  • Salt and freshly ground black pepper

  • 1 bouquet garni sachet


Method:

  1. Split the leeks. in half and chop into chunks. Place the butter in a large saucepan and heat until melted.

  2. Add the leeks and potatoes to the butter and cook until they are soft. Sprinkle the flour over the vegetables and cook for 1 minute, stirring all the time.

  3. Pour in the milk and bring to the boil, stirring. Season to taste with the nutmeg, salt and pepper and bouquet garni.

  4. Cover the pan, lower the heat and cook for a further 15 minutes, stirring occasionally. Remove the bouquet garni before serving.
