Pumpkin Soup (Minestra
di Zucca Gialla)

Ingredients

200ml/scant 1 cup water
-
350g/12 oz pumpkin, diced
-
15ml/1 tbsp sugar
-
15g/1 tbsp unsalted (sweet)
butter
-
450ml/2 cups milk
-
1.5ml/1/4 tsp salt
-
salt and freshly ground black
pepper

Croutons, to serve
Method:
-
Mix the water, pumpkin, sugar and butter in a
saucepan and cook very slowly for 15 minutes until
the pumpkin is tender.

Remove from the heat and
puree in a blender or food processor or press
through a sieve (strainer).

Bring the milk to
boiling point. Add the pumpkin puree and the salt.
-
Taste and adjust the seasoning, reheat and serve
hot, garnished with croutons.
