Italian Soups Recipes - Pumpkin Soup (Minestra di Zucca Gialla) Recipe

Ingredients

  • 200ml/scant 1 cup water

  • 350g/12 oz pumpkin, diced

  • 15ml/1 tbsp sugar

  • 15g/1 tbsp unsalted (sweet) butter

  • 450ml/2 cups milk

  • 1.5ml/1/4 tsp salt

  • salt and freshly ground black pepper

  • Croutons, to serve


Method:

  1. Mix the water, pumpkin, sugar and butter in a saucepan and cook very slowly for 15 minutes until the pumpkin is tender.

  2. Remove from the heat and puree in a blender or food processor or press through a sieve (strainer).

  3. Bring the milk to boiling point. Add the pumpkin puree and the salt.

  4. Taste and adjust the seasoning, reheat and serve hot, garnished with croutons.
