Quick Courgette
Soup (Minestra di Zucchini Alla Svelta)

Ingredients

350 g/12 oz firm
courgettes (zucchini), cut into chunks
-
3 tomatoes, skinned and
quartered
-
450 ml/2 cups milk
-
1.5 ml/1/4 tsp cayenne
-
Salt and freshly ground
black pepper
-
45 ml/3 tbsp single (light) cream
-
5 ml/1 tsp snipped fresh
chives
Method:
-
Mix all the ingredients except the cream and chives
and simmer for 15 minutes.

Puree in a blender or
food processor or press through a sieve (strainer).
Reheat. Pour the soup into individual bowls.

Add a
swirl of cream and sprinkle with chives before
serving.
