Italian Soups Recipes - Quick Courgette Soup (Minestra di Zucchini Alla Svelta) Recipe

Ingredients

  • 350 g/12 oz firm courgettes (zucchini), cut into chunks

  • 3 tomatoes, skinned and quartered

  • 450 ml/2 cups milk

  • 1.5 ml/1/4 tsp cayenne

  • Salt and freshly ground black pepper

  • 45 ml/3 tbsp single (light) cream

  • 5 ml/1 tsp snipped fresh chives 


Method:

  1. Mix all the ingredients except the cream and chives and simmer for 15 minutes.

  2. Puree in a blender or food processor or press through a sieve (strainer). Reheat. Pour the soup into individual bowls.

  3. Add a swirl of cream and sprinkle with chives before serving.
