Soup (Zuppa di Riso e Spinaci)

Ingredients

275 g/10 oz/1 carton
frozen chopped spinach, thawed
-
1.2 liters/2 pts/5 cups
chicken or vegetable stock
-
15 g/1/2 oz/1 tbsp
unsalted (sweet) butter
-
100 g/4 oz/1/2 cup arborio
rice
-
Salt and freshly ground
black pepper
-
Freshly grated Parmesan cheese
Method:
-
Place the spinach in a pan with the stock and
butter. Bring to the boil.

Add the rice, reduce the
heat and simmer for 15-20 minutes until the rice is
just tender.
-
Season to taste, ladle into soup bowls
and serve with the Parmesan cheese.
