Semolina Dumplings
in Hot Soup (Gnocchi di Semolina in Brodo)

Ingredients

25 g/2 tbsp
butter
-
2 eggs
-
Salt and freshly ground
black pepper
-
2.5 ml/1/2 tsp grated nutmeg
-
50 g/2 oz/1/3 cup
semolina (cream of wheat)

750 ml/3 cups
chicken stock
Method:
-
Cream the butter and eggs together until light and
fluffy. Season with salt, pepper and nutmeg.

Gradually blend in the semolina. Fill a large
saucepan with boiling water and carefully drop very
small spoonfuls of the semolina mixture into it.

The
semolina will swell and resemble small eggs. Cook
for 2 minutes until they rise to the surface.

Drain
and place in a saucepan of the simmering stock. Cook
for a further 2 minutes before serving.
