Italian Soups Recipes - Semolina Dumplings in Hot Soup (Gnocchi di Semolina in Brodo) Recipe

Ingredients

  • 25 g/2 tbsp butter

  • 2 eggs         

  • Salt and freshly ground black pepper

  • 2.5 ml/1/2 tsp grated nutmeg

  • 50 g/2 oz/1/3 cup semolina (cream of wheat)

  • 750 ml/3 cups chicken stock


Method:

  1. Cream the butter and eggs together until light and fluffy. Season with salt, pepper and nutmeg.

  2. Gradually blend in the semolina. Fill a large saucepan with boiling water and carefully drop very small spoonfuls of the semolina mixture into it.

  3. The semolina will swell and resemble small eggs. Cook for 2 minutes until they rise to the surface.

  4. Drain and place in a saucepan of the simmering stock. Cook for a further 2 minutes before serving.
