Italian Soups Recipes - Soup with Rice and Peas (Zuppa di Riso e Piselli) Recipe

Ingredients

  • 225 g/8 oz/1 cup long-grain rice

  • 10 ml/2 tsp olive oil

  • 2 onions, chopped

  • 2 garlic cloves, chopped

  • 1.2 liters/2 pts/5 cups chicken stock or water

  • 225 g/8 oz ham, diced

  • 4 tomatoes, skinned and chopped

  • 2 celery sticks, chopped

  • 225 g/8 oz fresh or frozen peas

  • 5 ml/1 tsp chopped fresh basil

  • Salt and freshly ground black pepper


Method:

  1. Soak the rice for 10 minutes in cold water. Drain the rice and place in a saucepan with the oil and chopped onions and garlic.

  2. Cook, stirring, for 2 minutes. Add the stock and ham to the saucepan and bring to the boil. Skim off the top if necessary.

  3. Simmer for 30 minutes. Add the vegetables and basil and cook for 10 minutes, stirring occasionally.

  4. Stir in the salt and pepper. Continue cooking for a further 10 minutes.
