Thick Fish Soup
with Noodles (Zuppa Spessa di Pesce con Vermicelli)

Ingredients
-
10 ml/2 tbsp olive oil
-
2 onions, sliced
-
2 garlic cloves,
chopped
-
3 tomatoes, chopped
-
1.2 liters/2 pts/5 cups
water
-
900 g/2 lb mixed fish
fillets, e.g. whiting, sole, mullet,
cod, hake, mackerel, chopped
-
300 ml/1 1/4 cups
white wine
-
100 g/4 oz vermicelli,
broken in pieces
-
Salt and freshly ground black pepper
Method:
-
Heat the oil in a large pan and fry (sauté) the
sliced onions for 2 minutes.

Stir in the garlic and
tomatoes and cook until soft. Stir in the water and
the fish.

Bring to the boil, lower the heat and
simmer for about 10 minutes. Remove the fish
carefully and place in a dish. Keep warm.

Stir the
white wine into the stock and vegetables, bring
to the boil and add the vermicelli.

Cook for 5 10 minutes, then pour over the fish and
season to
taste.
